Why do I see everything upside down and mirrored in the finder?

That is normal. Finder scopes are only used to make objects easy to locate. The image orientation does not matter for observation.

What is the difference between an alt-azimuth mount and an equatorial mount?

Alt-azimuth: easy to use, moves horizontally and vertically
Equatorial: enables precise tracking of objects with only one axis – ideal for high magnifications and astrophotography
